Lindsey's Famous Chocolate Chip Cookies

Ingredients:


1 cup unsalted butter

½ cup sugar

¾ cup brown sugar, packed

3 tsp vanilla

1 egg

2 cups flour (more or less to texture, see notes.)

½ tsp salt

1 tsp baking soda

semi-sweet or dark chocolate chips


Directions:


Cream butter then add the sugars until mixed well. Mix in the egg and vanilla. Combine the flour, salt, and baking soda then slowly mix into the wet ingredients. After fully combined, pinch your dough - the texture should be soft without sticking to your fingers. If it is sticky, add more flour. If it is dry, add a tiny bit of milk. Once your dough is the right consistency, fold in the chocolate chips.


Scoop 1” balls onto a greased cookie sheet (or use parchment paper or a baking mat).

Bake at 375 degrees F for 8-10 minutes

Take them out of the oven before they appear golden on the edges and let them set up and finish cooking on the cookie sheet. Once they have slightly sunken and have sat at least 5 minutes, remove them to finish cooling on a rack (or enjoy warm with some milk!)


TIPS:


Dough consistency is more important than the recipe. Add more or less flour depending on your altitude and humidity. The dough should feel soft and a little gooey, but without sticking to your fingers.


Let them set up on the pan! If you bake your cookies thoroughly in the oven until they are golden on the edges they will be more dry and brittle. For a softer cookie, take them out just before and let them rest on the pan.

I'm going to do this recipe things "backwards" since I know 99% of you will skip to the recipe anyway, right?


I kept this recipe, and mostly my tips, secret for YEARS.


Everyone loves my cookies and always ask for the recipes, but I thought it was so fun to have my secrets. People would ask me to make them cookies and I loved that it meant I got to make more cookies for others.


A few times my mom or a friend would even make them side by side with me and mine would always turn out better. (Their words first!) It's all in the tips. Dough consistency, the pinch test, and letting them firm up on the pan, not in the oven.


And if you really want to make them incredible, hand mix them. I NEVER use an electric mixer for my cookies. It's more fun for me, and I think the consistency is better. But maybe I'm just a little too particular about cookies...


I don't remember what turned my mind to share these secrets with you, but I decided it was time. I want everyone to experience amazing cookies. And I'm really curious where you stand with them.
