No-Fuss Sugar Cookie

This will become the only sugar cookie recipe you use.





 

No Fuss Sugar Cookie


ingredients

  • 2/3 cup butter, softened

  • 1 1/4 cup sugar

  • 2 eggs

  • 1 tsp vanilla (homemade makes it better!)

  • 1 1/2 tsp salt

  • 2 tsp baking powder

  • 3 cups unbleached flour


directions

Cream the softened butter then mix in the sugar until smooth. Add the eggs and vanilla until combined. In another bowl, combine the flour, salt and baking powder (or you can do this on top of the wet ingredients for less dishes.)


Mix the wet and dry ingredients together. It will look a bit crumbly, so use your hands to knead the dough. I promise this dough can't be overworked, and it is incredibly easy to handle.


Sprinkle some flour on a clean surface and roll the dough to about 1/4 inch thickness (no need to be precious with it though.) Cut shapes with cookie cutters or use an upside down glass cup for circles. Knead the leftover pieces into a ball again and repeat until all the dough has been shaped as desired. Place onto a cookie sheet.


Bake at 350 degrees Fahrenheit for 10 minutes. Cool on the cookie sheet for a couple minutes until transferring them to a cooling rack before icing. They're so good you may not even need the icing though.
